
One of my first exposures to the high end world of sparkling, I'll never forget when I ordered the $12 bottle (in 2017) at Bushwick's Carthage Must Be Destroyed (RIP) and this is what hit the table.
Obviously designed for restaurant dining, the softly beaded, clean, low mineral content and fine carbonation lead to an ideal pairing for finer foods. This is close to a platonic, albeit a bit boring, ideal — if it weren't for the exorbitant cost.
